The widespread Chardonnay is a cross-breed, supposedly spontaneous, when Pinot and Gouais Blanc have fallen in love together. This has happened in French wine region of Burgundy. For a very long time, it was assumed that the variety of Chradonnay was identical with Pinot Blanc, it was even assumed a mutation of this variety. Therefore it was called Pinot Chardonnay in France. Only in 1896, at a winery congress in Chalon, these two varieties of world known wines with similar names and Pinot Blanc were declared independent.
Interesting story, isn't it? But also our Chardonnay 2015 has its own nice story that I am happy to tell you. Thirty per cent of these grapes were impacted by mould and even though it sounds horrible, it was beautiful! Why? Because it was impacted by noble rot, Botrytis, and this is really beautiful for a winemaker. After milling, we measured the sugar content of 23 NM, then it was left in the maceration tank for two days at a low temperature to macerate and release the grapes to the whole volume, and thus we have increased the sugar content by two more degrees of NM. At the moment, we knew we had a treasure in our cellar. Only one left - to change it to a diamond.
Its cutting was that we have pressed it very carefully at low pressures, maximum 0.5 bars. After two days, skins were released and the first must had a fantastic aroma of overripen tropical fruits. Then one of the most significant processes of diamond cutting followed - fermentation. We gave it the pleasure of slow fermentation to keep the whole pallet of aromas that amazed us already at pressing. It was fermenting for 18 days, then it was carefully stirred on deposits for 6 months.
